I just put together a wonderfully delicious salad made from my morning harvest. I'm crunching on it while typing this post.
I'll tell you what's in the salad, but first, take a look at my first carrot from the garden. Of course I had to grow purple carrots. But I've never seen one like this. I feel it's a metaphor for the many things I have my fingers into right now. The vibrant greens depict a bounty of health. What do you think? Give me your best metaphorical interpretation.
Back to the salad. If you want to recreate it, here's what you need to use:
- Butter lettuce
- Dino kale
- Radishes
- Cucumbers
- Chives
- Green onions
- Chioggia beet (bull's eye beet)
I also added a few sliced Kalamata olives to spice it up. Then drizzled on the lemon and olive oil dressing left over from the White Bean Tuna Salad I made earlier this week.
Dressing Ingredients
3 Tbsp extra virgin olive oil
2 Tbsp fresh lemon juice
black pepper and sea salt to taste
The strawberry came from the garden too. A beauty! I saved it to share with my husband (awwwwww!).
