Green Curry with Quinoa Recipe


This recipe comes from one of my writing friends and an ardent devotee of Healthy Journey Cafe. Don't be afraid of curry. This dish is not hot unless you want to add some heat with a little Sambal chili paste or red chili flakes. Thanks Stephanie!

Green Curry with Quinoa

Yield 4 Servings

Ingredients
2-3 Tbsp green curry  paste
1 can coconut milk
1 C chicken, beef or fish, cubed (optional)
1 onion, chopped
1 med potato, chopped
2 carrots, chopped
1 bell pepper, chopped
1/2 C peas, fresh or frozen
1/2 -1 C water
2 C cooked quinoa

Directions
1. Combine curry paste and 1 C coconut milk in saucepan and heat on medium.
2. (Optional) Add meat and cook until done.
3. Add veggies and stir fry for 5 - 10 minutes.
4. Add remaining coconut milk and water. Bring to boil and simmer for 20 minutes.
5. Serve on cooked quinoa.


Notes: To make quinoa, boil 1 1/2 C water and add 3/4 C quinoa. Stir, cover and reduce heat to Lo for about 20 minutes.

  1. Looks good! In other news, my holistic practitioner wants me to go completely paleo (no grains or beans; just lean protein, starches, and non-starchy veg) but I think I want to get some tests run first for other food sensitivities. That would only leave me nuts,turkey, shrimp and fish as protein sources since I gave up red meat long ago. Never really liked red meat, and it doesn't like me!

  2. Except for the quinoa, I assume you could do the Green Curry recipe on the paleo diet. Can you do eggs?
