Getting ready for a bountiful harvest from your garden suggests the need for a list of salad recipes to have on hand. Here's one recipe you'll want to add to your list.
I threw this together with ingredients I had on hand. It's easy and takes very little time to make. Plus it tastes great. Of course it managed to show up when I made dinner for friends we had over a few weeks ago. It was enjoyed by all.
Start by gathering all the ingredients. Can you tell me which ingredient didn't make the photo? It happens a lot. I forgot to pull out the apple cider vinegar. I use Bragg Organic Raw Unfiltered Apple Cider Vinegar. Be assured it made it into the salad.
I partially peeled the cucumbers so the tough skin is partially removed. Use a peeler and scrape the cucumber lengthwise leaving a small strip of skin as you work around the veggie.
Tomato & Cucumber Salad
Yield 4-6 servings

Ingredients
1 Tbsp olive oil
1 Tbsp apple cider vinegar
1/4 tsp balsamic vinegar
1 tsp capers with splash of juice
Dash of seasoning mix (TJ's 21 Seasoning Salute)
1/2 C chopped yellow onion
1 cucumber
3 - 4 tomatoes
1 Tbsp chopped cilantro
Directions
1. Add olive oil, vinegars, splash of caper juice and dash of seasoning to small bowl. Wisk ingredients to blend and set aside.
2. Partially peel cucumber in strips length-wise. Cut lengthwise in quarters and chop into quarter rounds.
3. Cut tomatoes into wedges.
4. Add onion, cucumber, tomatoes and cilantro into bowl with lid. Pour dressing over veggies and stir.
5. Fasten lid and refrigerate for one to two hours to marinate.
6. Serve.
